Can you explain what gluten is and how gluten free meals are better for me?

Gluten is a protein found in the grain/grass family of grains. These grains include barley, kamut, oats, malt, pumpernickel, rye, spelt, triticale and wheat. Wheat is the grain most people associate with gluten sensitivity or allergy, but gluten is found in all of the grains above.
People with an intolerance to gluten often have celiac disease, with varying degrees of symptoms. The number of people with celiac disease has increased dramatically with the advent of better lab testing. As many as 1 in 100 people are gluten intolerant in the U.S. today.
Celiac disease, when untreated by avoiding gluten-containing foods, can cause mild to severe health complications. Gluten-intolerance is associated with chronic digestive symptoms, chronic sinusitis, autism, elevated liver enzymes (as seen by your doctor on lab tests), autoimmune disease and other symptoms.
